Yogurt Chicken Salad

  

Ingredients for Sauce


  • ½ Cup Greek Yogurt
  • 1 Teaspoon Dijon Mustard
  • 2 Tablespoon Fresh Lemon Juice
  • Salt & Pepper to taste
  • Fresh Dry Herbs of your liking (dill, cilantro, parsley, etc.)
  • 21/2 Cups Shredded Chicken
  • Celery (Optional)
  • Grapes (optional)
  • 0ne-half Small Apple, diced (Optional)
  • 1 Stalk Green Onions. diced


Instructions


  • Mix yogurt, Mustard, lemon juice, herb of choice
  • Add chicken and mix
  • Add Celery and other optional(s) if preferred, and mix
  • Enjoy



***Note - Can be eaten with crackers, on a bed of lettuce, as a side dish, or, on sandwiches, as an appetizer. A small amount of almonds can be added (or nut of choice) for extra crunch.***
